EVALUASI MAINTENANCE SERVICESCAPE UNTUK MENINGKATKAN PELAYANAN KARYAWAN SERVICE JAMOO RESTAURANT SHANGRI-LA HOTEL SURABAYA
Jamoo Restaurant is one of the luxury restaurants in Surabaya. Under the management \r\nof Shangri-La, Jamoo Restaurant has a servicescape. Servicescape is an important thing that \r\nmust be considered by service companies, especially hotels and restaurants, therefore this \r\nstudy aims to determine the condition of servicescape and evaluate the maintenance of \r\nexisting servicescape at Jamoo Restaurant Shangri-La Surabaya. This research used a \r\nqualitative approach, with data collection techniques using observation, literature study, \r\ninterviews. The data analysis techniques through qualitative. The results showed that Jamoo \r\nrestaurant applies 9 indicators from 12 servicescape indicators, but the evaluation of \r\neffectiveness and adequacy has not been implemented in servicescape maintenance. This is \r\nindicated by the temperature indicator which showed the room temperature of the outdoor \r\narea during the day was hot and the evaluation results on other indicators are the number of \r\nchairs and tables that are not enough so that it requires communication with the banquet \r\ndepartment to lending.
